What is it?

Tteokbokki is Korean chewy rice cakes simmered in a sweet, spicy gochujang sauce, often with fish cake, boiled egg and spring onion. The red version became popular in Seoul's Sindang-dong in the 1950s.

In Seoul, where summers are typically around 27°C and humid, tteokbokki is sold at pojangmacha tents and school-side stalls. Cheese or ramen noodles are common add-ons.

The rice cakes are dense and chewy, the sauce sticky with a sweet-heat kick. Stalls usually sell it by the cup or plate with a skewer for spearing. The heat builds slowly as you eat.

How we tested

Reference by Y.W. Fung at 82kg with an Apple Watch Ultra. The reference route is a 5.3-mile loop at 3.1 mph walking and 6 mph running; food burn minutes are calculated from calories at those rates, not individually walked off for every food. The reference test date is 2026-05-20. Check the food's listed source and serving.

In Seoul and Tokyo, where summers are usually around 27°C and humid, a longer walk in the heat can feel harder than the reference loop shown here.
